The apocalypse and soup...

*Drama Alert* This post is full of it. Consider yourself warned. 

Hello world. I'm writing this from what may well be my deathbed (deathcouch?) as I've been sick for the past five days with only heaven knows what. Shye has decided to take advantage of this most trying time and pop out two extra teeth. Yes you read that right, two EXTRA teeth. She already has all 20 of her baby teeth. Believe me, I've counted them several times. And now she is getting in a third set of molars on the bottom, numbers 21 and 22. I call them Gog and Magog, you know, the harbingers of the apocalypse. This is extremely rare since these molars aren't supposed to pop up for another 4 years or so. Basically it's been nothing but a non-stop party, of the pity variety around here.

In other news we've been getting some snow here in Utah. Snowy weather + being sick = soup days. So I've decided to share with you guys another one of my favorite soup recipes. I'm not a fan of green soups in general because they are usually made of peas (yuck!) and flavored with ham (double yuck!!!). But this particular green soup recipes is made of green beans and flavored with parmesan cheese so it is super delicious. Seriously, I usually eat like five bowls in one sitting.

Green Bean and Parmesan Soup
4 TBS of butter
1 lb of green beans, washed and trimmed
2 cloves of garlic, pressed
4 cups of vegetable or chicken stock
1 cup of fresh grated parmesan cheese
1/2 cup heavy whipping cream
salt and pepper to taste
three TBS of fresh chopped parsley to garnish (optional)

1. Melt the butter in soup pot. Add green beans and garlic and cook for 2-3 minutes over medium heat, stirring frequently.

2. Stir in the stock. Bring to a boil and then lower heat and simmer uncovered for 10-15 until the beans are soft.

3. Pour the soup into blender and blend until smooth. May be done in batches. After all the soup has been blended return to pot and reheat slowly.

4. Stir in parmesan cheese and cream.

5. Ladle soup into bowls and garnish with parsley. Serve with french bread.
